Pangkarra Apple Cake
(made from Pangkarra Wholegrain Stone Milled Durum Flour)


  • 1 3/4 cups of Pangkarra Wholegrain Flour
  • 4 Granny Smith Apple
  • Teaspoon of cinnamon
  • 4 Tablespoons of butter
  • 1 cup of sugar (or 110grams of castor sugar and brown sugar mix)
  • 3 eggs
  • 2 1/2 tsp of baking powder
  • 1 tsp of baking soda
  • 1 cup of milk
  • Icing sugar to dust


  1. Pre-heat oven to 180 degrees.
  2. Using a mix master, mix together the butter and sugar until creamy, and then add eggs one at a time. Add remaining ingredients and beat on high for five minutes.
  3. Meanwhile, line a Pyrex dish or cake tin approx 28 x 18cm with baking paper. Slice the apples and sprinkle with cinnamon. Mix the apples in with the cake misture. Spread mixture evenly through tin the cake tin.
  4. Place cake tin in oven and bake at 180 degrees for 35-45 minutes. Allow to sit for five minutes in room temperature before serving.
  5. Serve immediately or refrigerate and serve within three days.

    Serves 4.
